Corned Beef and Cabbage Recipe

Serve with mustard or horseradish, if one desires.

Ingredients of the Recipe:
1. 3 pound packet of corned beef with spice
2. 5 carrots peeled and cut into long stripes
3. 1 large cabbage cut into small wedges
4. 10 small red potatoes

Method of Preparation:
1. Put corned beef in a large pot and cover with water. Add the packet of spices that came along with the corned beef. Cover the pot and allow it to boil then reduce the heat and allow it to simmer.

2. Allow it to simmer for 50 minutes per pound of its weight or until it becomes soft. Add the potatoes and carrots and cook them until they become soft. Add cabbage and let it cook for 15 more minutes.

3. Remove the meat from heat and let it rest for 15 minutes. Place the vegetables in a bowl and cover the bowl. One can add as much broth as one wants and then slice the meat into pieces.
