Pineapple Walnut Biscotti Recipe

Ingredients
1. All purpose flour (2c)
2. baking powder (1 1/4tsp)
3. chopped dried pineapples (1c)
4. cinnamon (3/4tsp)
5. hot water (2c)
6. salt (1/4tsp)
7. canola oil (1/2c)
8. chopped walnut (1c)
9. almond extract (1/2tsp)
10. vanilla extract (1tsp)
11. orange zest (2tsp)
12. granulated or pearl sugar (2tbsp)
13. eggs (2)
14. granulated sugar (3/4c)
Method of preparation:-
1. Take a small bowl. Put dried pineapple in it. Pour hot water over the pineapples to soak them. Keep it aside for 15 minutes.
2. Take a medium size bowl. Mix flour, cinnamon, baking powder and salt in it and keep it aside. Take a large bowl, beat eggs and 3/4cup of granulated sugar in it with a blender on medium speed. Beat it until it gets fluffy. Add oil in it and again beat it until it gets smooth.
3. Beat almonds extract, vanilla and zest in it. Drain pineapples and add in this mixture. Now add walnuts and mixture of dry ingredients in it. Cover the bowl with lid and keep it in refrigerator to chill.
4. Heat the oven to 325 degrees. Take the chilled dough and knead it until it gets smooth. Take a baking sheet and grease it. Place the dough on it and shape it into logs. Sprinkle the granulated sugar of 2 tablespoon on log and press to lightly flatten.
5. Place the sheet in oven and bake it for 20 to 25 minutes until the edges begin to brown. Take off the sheet from oven and bake it for 15 minutes. Now place the logs in cutting board and cut into slices with serrated knife.
6. Place biscotti with cut side down and bake it until it gets brown for about 20 to 25 minutes. Take off from oven and place on wire rack to cool for about 45 minutes and then store in air tight container.
Make about 36 biscotti.
