Spring Biscotti Recipe

Ingredients
1. All purpose flour (2c)
2. baking powder (1 1/2tsp)
3. egg white (1)
4. eggs (2)
5. white sugar (3/4c)
6. butter (1/4c)
7. vanilla extract (1/2tsp)
8. orange zest (1tbsp)
9. pistachio nuts (1 1/4c)
10. cranberries (1/2c)
11. chopped white chocolate (2 ounces)
12. salt (1/4tsp)
Method of preparation:-
1. First heat the oven to 325 degrees F. Grease or line the baking sheet.
2. Take a large bowl. Mix butter, orange zest, vanilla and sugar in it with an electric mixer until it gets fluffy. Mix eggs and egg white in it.
3. Take another bowl, mix flour, baking powder and salt in it. Add this mixture into the cream mixture and blend it with wooden spoon. Add pistachios, cranberries and chocolate in it.
4. Cover it and keep it in refrigerator to chill until dough gets sticky. Place dough on floured surface and divide into halves. Flat each half of dough into rectangle shape logs.
5. Place logs on baking sheet about 3 inches apart. Bake in oven for about 30 minutes until it gets pale gold. Take off from the oven and cool it. Cut these logs on cutting board about ½ inch thick diagonal shape.
6. Place these slices on baking sheet and bake for about 15 minutes until get golden. Place these biscotti on wire rack to cool. Store the biscotti in airtight container.
