Toscani Biscotti

These cookies are baked twice to add to their delicious flavour.

Ingredients of the Recipe:

1/3 cup butter, 3/4 cup white sugar, 2 eggs, 1 teaspoon vanilla extract, 1/4 teaspoon almond extract, 2 teaspoons orange zest, 2 1/4 cups all purpose flour, 1 1/2 teaspoons baking powder, 1/8 teaspoon ground nutmeg, 1/4 teaspoon salt, 1 cup semisweet chocolate chips and 1/2 cup toasted almond pieces.

Method of Preparation:

Heat up the oven to 325 degrees F. Grease and apply flour to a large baking sheet. Beat cream and sugar until flully. Add eggs, vanilla, almond extractand zest. Mix together baking powder, nutmeg, salt and flour. Then add these to the mixture along with the almonds. Divide the dough into two pieces. Form into long flat loaves that are 1/2 inch talla and 12 inches long. Place these loaves on the baking sheet and bake in the preheated oven for 25 minutes. Take them out when they become light golden brown and cool for 5 minutes on a wire rack. Cut these diagonally into pieces. Place these back on the baking sheet and bake for 10 minutes, turning them once in between. Take out and cool on a wire rack. In a microwave safe bowl, melt some chocolate chips. Stir every 30 seconds to make sure the melted chocolate is smooth. Spread chocolate on one side of the cookies. Let it remain at room temperature until the chocolate settles down.
