Walnut Coconut Biscott Recipe

Ingredients of the Recipe:
1. 1/2 teaspoon salt
2. 1/2 cup flaked coconut
3. 1 cup chopped walnuts
4. 1 cup white sugar
5. 1/2 cup softened butter
6. 3 1/2 cups all purpose flour
7. 1 teaspoon baking powder
8. 1 teaspoon coconut extract
9. 2 eggs
Method of Preparation:
1. Set the oven to heat to 350 degrees F. First mix the sugar and butter well. Next add coconut extract and eggs and stir them well. Then add flour, baking powder and salt.
2. Mix these ingredients into a creamy mixture. Add the coconut and walnuts. Divide the mixture into two portions. Roll each of these into logs of length 10 inches.
3. Place in a cookie sheet and flatten them until they are about 3 inches wide. Place them in the preheated oven and bake for 35 minutes. Let them cool for 15 minutes. Cut these logs diagonally into slices of width 1/2 inch each.
4. Again place them on the baking sheet and cook in the oven for 15 more minutes. These will become crisp and light brown when done. Cool and serve.
