Chicken Cacciatore

A recipe making use of mushrooms. Gives the chicken a special taste and aroma.

Ingredients of the Recipe:

1/2 teaspoon salt, 2 cups all purpose flour for coating, 1/4 teaspoon ground black pepper, A 4 pound chicken cut into pieces, 2 tablespoons vegetable oil, 1 chopped onion, 2 cloves minced garlic, 1 green bell pepper chopped, a 14.5 ounce can of diced tomatoes, 1/2 teaspoon dried oregano, 1/2 cup white wine, 2 cups fresh quartered mushrooms and salt and pepper to taste.

Method of Preparation:

Mix the flour, salt and pepper in a plastic bag. Put the chicken pieces in the flour and shake until the chicken pieces get coated evenly. In a pan, heat oil and fry the chicken pieces until the peces turn brown on both sides. Take out the chicken pieces from the pan. Add onion, garlic and bell pepper to the pan and saute until the onion turns brown lightly. Put the chicken back to the pan and add tomatoes, oregano and wine. Cover the pan and cook gently over medium low heat for 30 minutes. After that add mushrooms and salt and pepper to taste and let it cook for 10 more minutes and serve afterwards.
