Garlic and Lemon Chicken Recipe

Ingredients of the Recipe:
1. 15 chicken thighs
2. 8 large peeled and quartered potatoes
3. 1 quart vegetable oil for frying
4. 1/2 cup wine vinegar
5. 10 cloves crushed garlic
6. 2 tablespoons dried oregano
7. 2 tablespoons dried parsley
8. 1 minced onion
9. salt and pepper to taste
10. juice of 1 lemon
Method of Preparation:
1. Heat the oven to 350 degrees F. Place the pieces of the chicken in a roasting pan.
2. Fry potatoes in 1/2 inch deep oil in a pan over medium high heat. Fry the potatoes until they turn golden brown. Put them in the pan with the chicken.
3. Combine the vinegar, lemon juice, garlic, oregano, parsley, onion, salt and pepper with 1/2 cup frying oil. Then pour this mixture over the chicken and potatoes.
4. Bast the chicken and potatoes with the sauce mixture and then bake it in the preheated oven for 1 1/4 hours. Take the chicken out of the oven and let it rest for 5 minutes. Serve hot.
