Pan Cooked Chicken Recipe

This is easy to make. It is very good to taste.

Ingredients
1. Chicken breast, park boned (4)
2. chicken stock (2/3c)
3. butter (2tbsp)
4. olive oil (2tbsp)
5. onion cut into wedges (2red)
6. all purpose flour (2tsp)
7. dry white wine (2/3c)
8. lemon juice (2tbsp)
9. artichoke halves, drained and halved (1can)
10. salt and pepper (to taste)
11. chopped fresh parsley (to garnish)

Method of preparation:-
1. Take chicken and season it with salt and pepper according to taste.

2. Take a large frying pan. Heat butter and oil in it. Add chicken in the pan and fry it for 4 to 5 minutes on each side until it gets lightly golden.

3. Now take out the chicken from the pan. Now take lemon juice in a bowl, toss the onion in it and then put the onion in the frying pan. Fry it for about 3 to 4 minutes or until it gets soften.

4. Put the chicken again in the pan. Now pour wine and stock, cover the pan and boil it over low heat for 30 minutes.

5. Take out the chicken from the pan. Keep the juice warm in the pan. Boil the juice again for 5minutes. Take a small bowl. Blend the butter with flour in to paste in it. Add this paste with spoon in the juices of pan.

6. Cook it over low heat until it gets thickened. Mix the seasoning according to taste in the artichoke hearts and cook for 2 minutes. Pour this mixture over the chicken and use chopped parsley to garnish it before serving.
