Pesto Potatoes and Italian Chicken Recipe

 Italian Chicken and Pesto Potatoes
A chicken recipe that is very tender and delicious.

Ingredients of the Recipe:

4 1/2 ounces sliced mozzarella cheese, salt and pepper to taste, 4 slices Parma ham, 1 pint cherry tomatoes, 3/4 cup balsamic vinegar, 4 boneless chicken breast halves, 1 tablespoon olive oil, 1 pound small potatoes and 2 tablespoons prepared basil pesto.

Method of Preparation:

Heat up the oven to 400 degrees F. Boil vinegar in a pan. Reduce heat and cook gently for 15 minutes with constant stirring. Continue stirring until vinegar thickens. Make a pocket in each of the chicken breast and fill the pockets with equal amounts of mozzarella cheese. Season the chicken breasts with salt and pepper. Use a slice of ham to wrap each chicken breast. Place the chicken breasts in a baking dish and place tomatoes around the chicken. Sprinkle olive oil all over and season with salt and pepper. Allow it to bake for 25 minutes in the oven. Boil the potatoes for 15 minutes in lightly salted water in a pan. After that drain the water and coat the potatoes with the pesto. Put the chicken breasts, tomatoes and the potatoes on serving plates and use the boiled balsamic vinegar to serve.
