Ricotta Cookies Recipe

Ingredients of the Recipe:
1. 15 ounces ricotta cheese
2. 2 tablespoons vanilla extract
3. 4 cups all purpose flour
4. 1 teaspoon baking powder
5. 1 teaspoon baking soda
6. 1/2 pound butter
7. 1 3/4 cups white sugar
8. 2 eggs
9. 5 tablespoons milk
10. 1 1/2 cups confectioners’ sugar
11. 1 teaspoon almond extract
12. 1/4 cup colored candy sprinkles
Method of Preparation:
1. Heat up the oven to 350 degrees F. Mix together butter, sugar, eggs, ricotta cheese and vanilla extract in a bowl.
2. Mix the flour, baking powder and baking soda and mix thoroughly to form a creamed mixture. Add some flour to keep it from becoming sticky. Shape the dough to form balls of the size of a teaspoon.
3. Place these balls on a cookie sheet and bake for 10 minutes in the oven. Take them out when the balls turn light brown.
4. Mix and beat the milk, confectioners’ sugar and almond extract in a bowl until smoothed up and mixed thoroughly. Pour the mixture over warm cookies with a spoon and sprinkle with colored candy sprinkles.
