Italian Rice Fritters Recipe

These are easy to make and serve them as dessert.

Ingredients
1. Uncooked rice (1c)
2. eggs separated (3)
3. vegetable oil (for frying)
4. grated zest (2lemons)
5. granulated sugar (1c)
6. milk (3c)
7. salt (as per taste)

Method of preparation:-
1. Take a saucepan, mix rice, milk and sugar in it. Place the pan over medium heat and then boil it. Now reduce the heat to low. Cover it and simmer until the milk gets absorbed for about 15 to 20 minutes.

2. Take a baking sheet, spread rice on it and keep it in refrigerator for 15 minutes.

3. Take a large bowl, mix chilled rice, 3 egg yolks, lemon zest and salt in it. In another bowl whip egg whites in it until form soft peaks and add it into the rice mixture.

4. Take a frying pan, heat oil in it. Put the batter with spoon into the oil and fry until gets golden brown from all sides for about 3 minutes. Now drain the fritters on paper towel and serve them hot.

Make 36 fritters.
