Italian Wedding Soup Recipe

Ingredients
1. Homemade chicken broth (8c)
2. ground pork (3/4pound)
3. ground beef (3/4pound)
4. dry bread crumbs (1c)
5. dried parsley (1tsp)
6. dried basil (2tsp)
7. eggs (3) plus 5 more eggs
8. grated parmesan (1/2c plus 1c)
9. cleaned and chopped head escarole
Method of preparation:-
1. Take a pot, place it over medium heat and boil broth in it. Take a bowl, mix ground pork, ground beef, 3 eggs, bread crumbs, parsley and basil and ½ of the parmesan in it. Mix all these and then make the balls of bite size.
2. Then drop these balls into the broth. Now add escarole into the broth and cook it for about 6 to 7 minutes. When the meat broth rises into the top of broth then they are cooked and when the escarole gets witted then it is ready.
3. Take a small bowl mix the remaining 5 eggs with the remaining 1 cup of cheese. Mix it well. Now pour this mixture in the soup and then stir it continuously until the eggs get cooked.
