Tortellini with Italian Sausage Soup Recipe

Ingredients of the Recipe:
1. 1 pound sweet Italian sausage casings removed
2. 1 cup chopped onion
3. 2 cloves minced garlic
4. 5 cups beef broth
5. 1/2 cup water
6. 1/2 cup red wine
7. 4 large tomatoes peeled seeded and chopped
8. 1 cup thinly sliced carrots
9. 1/2 tablespoon packed fresh basil leaves
10. 1/2 teaspoon dried oregano
11. 1 (8 ounce) can tomato sauce
12. 1 1/2 cups sliced zucchini
13. 8 ounces of fresh tortellini pasta
14. 3 tablespoons chopped fresh parsley
Method of Preparation:
1. Brown the sausages in a Dutch oven. Remove sausages and drain them but reserve a tablespoon from the drippings.
2. Brown the onions and garlic in drippings. Add the beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Boil it for some time and then reduce the heat. Let it cook uncovered for 30 minutes.
3. Remove the fat from the soup and add the zucchini and parsley. Cover and cook it for 30 minutes. Add tortellini after cooking for 20 minutes. Sprinkle with Parmesan cheese on top when serving.
